Linda McCartney Sausage Pasta

So since we are all stuck at home I feel that this is probably a really good time to practice our cooking skills and today I wanted to make something hearty and that would fill me up. I put together a delicious easy sausage pasta, even with making your own tomato sauce it takes about 30 minutes in total! Interested? Keep reading for instructions :)





Ingredient serves 2 :


-4 linda McCartney vegetarian sausages

-4 tomatoes

-200g of chopped tomatoes

-1/2 onion

-3 cloves of garlic

-1 aubergine

-1 courgette

-1/2 red pepper

-250g pasta of your choice


Herbs and spices :

-1 handful basil leaves (fresh)

-1 teaspoon oregano

-1 tsb. paprika

- Salt and pepper (to taste)


Process:


1. I start by putting my Linda McCartney sauces in the oven for 15 minutes. ( Link here )

2. Put your half packet of pasta on and cook due to instructions.


I then start by making my sauce:


3. Heat your pot with a fair portion of olive oil put in your half onion and garlic and let brown for 2-3 minutes.

4. Cut up your tomatoes, and blend for 30 seconds but make sure there’s still some whole chunks.

5.Put into your pot with your onion and garlic, add one tea spoon of each herb and spice, then add your tinned tomatoes and let simmer for 2-3 minutes.

6. Add your cut up veggies ( can be anything you want, I chose aubergine, courgette and pepper for colour)

7. Let everything simmer and cook for 10 minutes but keep stirring as you go.

Check on your sausages and pasta at this point they should both be almost ready,

once pasta is ready add it to your sauce and once your sausages are done cut into small pieces and put into pasta and sauce.
