5 Super Green Risotto Recipe


Our favourite risotto, that has loads of good green veg and (no mushrooms! We'll get onto that later) is such an easy 15 minute dish, that'll definitely impress! Send us a picture of your final dish over on our forum and any special twists you make!



Ingredients:

Serves 3

1 whole leek, chopped

6 asparagus steams, chopped

150g spinach

100g green beans, chopped

1 medium sized courgette, chopped

300g arborio risotto

1 vegetable stock cube (we use Knorr, which are vegan)

100ml white wine (Tesco own-brand is all vegan)

Seasoning, fresh corriander

Vegan parmesan


1. Boil the leeks, asparagus, green beans and courgette in 500ml of water for 3-5 minutes, then using a slotted spoon add to a frying pan with oil. Add the stock cube into the boiling water.

2. Add rice to the pan for a minute and then add the white wine for another minute until absorbed.

3. Slowly add the stock water, one ladle at a time, making sure it's fully absorbed into the rice each time.

4. Serve up, top with coriander and vegan parmesan. Enjoy
